Skate Wing

Monkfish Tail

John Dory

John Dory, also known as the St. Peter fish, is a highly valued prime fish. Its bottle green skin and spikes surrounding its fins make it unmistakable. Available for a relatively short season in early Autumn; fish sizes vary between the cheaper small fish from 200g to the higher priced larger fish from 1 to 3 kg.

Hake

Hake is a long silver-scaled fish caught off the deep waters of the Cornish coast. The creamy flesh suits many types of recipes and preparation. Available throughout the year but be aware that this fish is caught by static nets that can only be fished during neap tides. Please call our office for availability. Fish range from “pins” at 150g and all sizes up to the “jumbo” fish of 4-5kg.

Haddock

With a creamy, white flesh that is high in gelatine, and has a subtle delicate flavour, Haddock makes a good alternative to Cod and smokes particularly well. As with all round fish, haddock is more readily available in the first quarter of the year. Fillets sized between 300 and 600 grams, normally scaled and pin boned before dispatch.
