Slow Hot Smoked River Fowey Mussels

Kippers

Our kippers are created from winter catches of large herring. It is critical to use a winter herring for its flavour and high Omega 3 oil content. Once landed, the herrings are naturally cured with no artificial additives or preservatives and home smoked in our very own kilns. Kippers are available on 3kg boxes (8 – 9fish).

Rick Stein selected our kippers for his restaurants, describing them as the best flavour by far.

Hot Smoked Cornish Trout

Our kiln-roasted smoked trout fillets are cured from selected Farmed Rainbow trout from Boscastle Cornwall which only we have access to. For constant availability, our skinless hot smoked trout fillets are vacuum packaged in pairs and deep frozen.

Haddock fillets smoked

Wherever possible we buy haddock from David Steven’s fishing boat ‘The Crystal Sea’ – the best haddock is abundant off south west Cornwall and is sold at the auction market in Plymouth. Fresh fillets are then home smoked to our own natural cure here in our very own smokehouse – the traditional way!
