Swordfish Steak Loin

These meaty steaks pack a lot of flavour, so don’t be afraid of pairing swordfish with stronger flavours such as garlic, chilli or ginger. Try it chargrilled or pan-fried – but despite being a relatively oily fish, be sure to brush it with oil before cooking to retain the moisture. Our swordfish loins weigh around 1-1.25kg and yield 5 to 7 portions.

Grey mullet

Gurnard

Gurnard comes in three types in British waters: red; grey, and yellow (also called tub). Years ago Gurnard was used as crab and lobster bait but with its firm white flesh, is now valued for its quality and flavour. Bass
