Skate Wing

Skate or ray are almost always offered as skinned “wings” as the fish have a tough skin that needs to be removed before preparation or cooking. The wings have long thin sections of juicy flesh either side of a simple bone. Available throughout the year and offered as wings sized between 300g and 2kg.

Plaice
