Monkfish, also known as Angler fish, have a large flat head that is almost always removed at sea when caught.  There are two round tapering fillets produced from the tails. Their robust, firm flesh and gentle subtle flavour suits most recipes. Available throughout the year; ranging in size from 250g to 5kg.
