PILCHARD - Sardina pilchardus
As the latin name suggests Pilchards are the same species as Sardines, being in abundance in the waters surrounding the Cornish coast. This fishery is concentrated mostly in the inshore waters aropund St. Michael's mount near Penzance.
Sardines are availble for most of the year apart from l;ate spring and early summer. Fish sizes are around 6 to 10 to the kilo.
