Ling is green coloured eel like fish from the cod family; it is highly valued by the French. Ling has long fin structure that run the whole length of the fish; fillets are longer and thinner that other round fish fillets such as cod and haddock.
There is no definite season for ling, fish are available throughout the year and range in size from 3kg to 10kg.
