HADDOCK FILLET - Melanogrammus aeglefinus

Haddock is a white fish similar in many ways to cod and whiting. This fish has the "thumb and for finger" mark associated with biblical times.  As with all round fish haddock ir more readily available in the first quarter of the year.

Haddock has a creamy white flesh that is high in gelatine, and has a subtle delicate flavour. Haddock makes a good alternative to Cod and smokes particularly well.
Fillets sized between 300 and 600g and are normally scaled and pin boned before dispatch
