COLEY - Pollachius Vivens
An alternative to Cod and Haddock, also known as Saithe. Coley has a long tapered body, with a dark blue skin. Fish range from 500g to 6kg but are usually only available as fillets. Coley can be a good buy, but needs to be as fresh as possible. The flesh is a dull off-white colour but lightens during cooking and it has a fine flavour.
Fillets range from 300g to 1.5kg and are available for almost all of the year.
